My ultimate comfort food is salmon with a brown soy sauce sauce. I grew up spending long summers in Chitina with my father and brothers who subsistence fished for salmon. We packed our deep freezer full of salmon for the winter and ate salmon like most families ate chicken… 3-4 times a week. I can remember coming home from elementary school, calling my dad to let him know we’d made it and he’s ask me to make “his” brown sauce.

2 cups butter

2 Tablespoons ketchup

2 Tablespoons mustard

1/4 cup soy sauce

Dried chopped onion

A dash or two of Lea/Pearins

Salt /Pepper to taste

Bring it all to a raging boil, then simmer for 15 minutes, stirring constantly. Let sit for a few hours to thicken. Brush on top 2 fillets. Bake salmon at 375 for 20 minutes.

My dad grew up on an island, St Lawrence Island and there weren’t that many stores so this recipe was a “what’s in the frig recipe” that turned into a family favorite. Since my dad passed I’ve been the keeper of “The Brown Sauce” recipe and now I’m sharing it with you.
